Fresh Spring Roll Recipe

Spring rolls are considered a seasonal Vietnamese food consumed during the Spring to welcome the new season. Fresh Spring rolls are both healthy and delicious, and they serve as the perfect appetizer for your next gathering. The rolls can be made in many ways and are typically served with a dipping sauce.

Below you’ll find all the ingredients to a fun but easy recipe. One thing to remember is you can most certainly substitute and add ingredients to make it your own.

Ingredients

Spring Roll Ingredients

  • 1 lb of medium-sized pre-cooked shrimp (You may add a different protein or leave it out if you are a vegetarian)

  • 1/2 bunch of cilantro (remove from stem)

  • 1 oz. Thai or sweet basil (remove from stem)

  • 2 cups of carrots (Carrots may be pre-packaged, or you can shred them yourself)

  • 1 large cucumber (julienned)

  • 2 cups of red cabbage (shredded)

  • 4 oz. Vermicelli rice noodles

  • 12 rice papers

Dipping Sauce Ingredients 

  • 1/2 cup of hoisin sauce

  • 4 Tsp of sugar

  • 4 Tsp of water

  • 4 Tsp of freshly squeezed lime juice

  • 1 Tbsp of chopped peanuts (to garnish) (do not use if allergic)

How to make the vermicelli rice noodles

  1. Bring a large pot of water to a boil.

  2. Add 4 oz of vermicelli noodles.

  3. Allow the noodles to soak in the warm water for 5 minutes.

  4. Drain water from the pot using a colander and rinse under cool running water.

Ready your rice paper 

  1. Fill a large shallow pan or dish with 1-2 inches of warm water.

    (The dish should be large enough to fit a piece of rice paper.)

  2. Dip one piece of rice paper into the warm water and let soak for 5 seconds.

  3. Remove the rice paper from the water and place it on a plastic cutting board.

Ready, Set, Roll

  1. Add a tablespoon of cilantro, a few basil leaves, 2-3 shrimp, ¼ cup vermicelli noodles, 2-3 strips of cucumber, 1-2 tbsp of carrots, and 1-2 tbsp of shredded cabbage to the middle of the rice paper.

    (Place just enough of these ingredients into the roll without overfilling it.)

  2. Fold over the bottom edge of the rice paper that is closest to you to cover up the ingredients.

  3. Fold the right side of the paper over. And then fold the left side over. It should look like an opened envelope at this point.

  4. Roll the rice paper and ingredients like a burrito beginning from the side that is closest to you until it makes a tight spring roll.

How to make the dipping sauce

  1. Add all ingredients, except for the water, to a medium-sized bowl.

  2. Add the water a tsp at a time until it reaches your desired consistency. Adjust the seasoning as needed.
