Lemon Blueberry Oatmeal Squares

We all know breakfast is the most important meal of the day, and this recipe will surely start your day on a high note. It’s simply delicious and healthy. Follow this recipe to meal prep for the week and make breakfast time less stressful for you. Enjoy!

Ingredients

• ⁠3 cups of blueberries

• ⁠2 tsp of sugar or Splenda

• ⁠3 cups of oats

• ⁠2 scoops of vanilla protein powder

• ⁠1 tsp of baking powder.

• ⁠3 eggs or 10tbsp egg whites

• ⁠2 cups of milk

• ⁠3 tbsp of lemon juice

• ⁠2 tbsp of maple syrup or honey

• ⁠1 tbsp of melted butter

• ⁠4 oz of cream cheese

• ⁠2 tbsp of sugar

• ⁠lemon zest topper

Instructions

  • 1. ⁠Mix 3 cups of blueberries and 2 tsps of sugar or Splenda and set aside

  • 2. ⁠Combine in a separate bowl 3 cups of oats, 2 scoops of vanilla protein powder, and 1 tsp baking powder. Mix together.

  • 3. ⁠Add to dry mix - 3 eggs or 10tbsp of egg whites, 2 cups of milk, 3 tbsp of lemon juice, 2 tbsp of maple syrup or honey,1 tbsp of melted butter, and your macerated blueberries.

  • 4. ⁠Spray a 13x9 pan and add the mixture

  • 5. ⁠Separately Mix 4 oz of cream cheese and 2 tbsp of sugar. Toss in the microwave to soften and dollop on top of your oatmeal mix in the pan and swirl it in.

  • 6. ⁠Bake 350 degrees for 35-40min or until the center is set.

  • 7. ⁠Garnish with lemon zest if you like. Cut into six pieces and store in the fridge
